If you spend any time on the coffee internet (especially Youtube), it's hard to miss James Hoffman. His calming British accent, brightly colored sweaters, and sense of charming good humor make him a pleasure to encounter. Also, he's extremely coffee smart and curious.
Together with producer and fermentation expert Lucia Solis, they created an exciting opportunity for roasters and consumers around the globe to learn a little more about fermentation in coffee. Check out this introductory video from Hoffman and Solis!
Grown in Antigua Valley, Guatemala on Finca San Miguel Urias by Hector and Lillian Leal, we have one washed coffee processed and fermented (by Solis) four different ways. In this kit you'll receive 4oz of each coffee to taste and compare. They are:

Mechanically demucilaged: our control, this coffee did not undergo any intentional fermentation.

Wild fermentation: this coffee underwent a 48 hour fermentation with the local, wild microbes.

Lactobacillus inoculated: this coffee has added Lactobacillus with a 48 hour submerged fermentation.

Yeast inoculated: this coffee has been inoculated with saccharomyces yeast in a 48 hour submerged fermentation.
