At 802 Coffee, we're excited to feature coffees that are less common in the specialty world and the Dominican Republic falls in that category. This year's crop is another special coffee from the family-operated Ramirez Estate. The estate endeavors to be a conscientious neighbor through support of local schools, helping Haitian immigrants with citizenship for higher wages, and using fermented coffee cherries to produce their own natural gas power.
This lot is a natural process with the same rich flavors as last year's red honey process. In the cup we tasted sweet cherry cordial, fudge, and red apple. The body is velvety and thick but still exceptionally balanced. We've already enjoyed several lovely pour over brews and we look forward to more!
