Guatemala El Pilar Micro Lot
On a forested mountain farm in the Central Highlands of Guatemala a father and son team run what is now a third generation coffee finca called El Pilar. Luis Daniel Avila Rivera and his father Benito Avila Guera work the farm first acquired by Luis Daniel’s grandfather Eustoqiuo Avila in 1930, and generations of coffee knowledge are clear in the amazing El Pilar Micro Lot we are so excited about this year. Located in San Martin Jilotepeque, Chimaltenango, the Avila family grows Bourbon and Pache varietals at elevations ranging from 1500 meters to 1800 meters. Our particular Micro Lot is single varietal sorted for Pache machine washed to conserve water, and patio dried. The results are absolutely exquisite. We roast the El Pilar light to bring out the pear, peach, and milk chocolate notes, and accentuate the vibrancy, balanced acidity, and the smooth finish that we find in this coffee’s sweet spot.
